Tareben Negi-Salt Pork Trotter Bento
Japanese pork tenderloin (the part around the neck), which is carefully selected for its thickness, is baked to a fragrant aroma, and then tossed with a generous 25 grams of the chef's original negi shio (green onion and salt) sauce. The Negi-Salt Sauce is a reproduction of Chef Toba's recipe. Ingredients used in the Negi-Shio Sauce include green onions, sesame oil, salt, vinegar, black pepper, and honey.
