Yamagata Benioh Parfait" from Shiseido Parlor Ginza Salon de Café

Shiseido Parlor Ginza Salon de Café will offer a limited-quantity "Yamagata Benioh" parfait featuring Yamagata Prefecture-grown "Yamagata Benioh" cherries, a new variety that made its pre-debut this year. It will be available from June 28 to July 3. The price is 5,000 yen (tax included).

This parfait uses rare Yamagata Benioh cherries, a new variety of cherries produced in Yamagata Prefecture that made its pre-release this year. Each cherry is about 3 cm in diameter, large and shiny, with slightly less acidity and a sugar content of over 20 degrees for decoration. It is made with compote, mousse, jelly and granite.

Yamagata Beni Ou, a promising new large-bodied variety bred by Yamagata Prefecture over a period of more than 20 years, made its pre-debut on June 23. This year's shipment is about 6 tons, a mere 0.05% of the prefecture's total cherry production.
