The unique "Okoge (roasted rice cake) method" is used to control the degree of baking, and the bread is shaped into a mountain so that the flavor of the roasted rice cake can be enjoyed easily.

According to Nogami, the first thing you feel in your mouth is the savory aroma of the mountain part, followed by the soft sweetness of the wheat as you taste the inside of the dough. At the end of the meal, the chunky dough with a hint of sweetness is said to unite with the tasty burnt sesame seeds, leading to a deep richness and lingering taste.

The temperature of the water used to knead the dough and the fermentation time are adjusted according to the temperature, room temperature, and humidity of the day. In addition, the dough's delicious moisture is sealed in the dough through repeated fine temperature control of the upper and lower flames using the okoge method, resulting in a texture that is almost sticky.

The dough can be torn into pieces by hand and eaten with sweet jams, salty or sour ingredients, and other foods. The savory and rich flavor of the roasted rice enhances the acidity.
