Japanese Tea Mousse Chocolat
This is the second product from the brand "Kanade: Delicious Concerto" planned by Shigeyuki Oishi, the top chocolatier of Merry Chocolates. It is a cool and refreshing sweet with the aroma and taste of tea spreading from the light and fluffy mousse like light snow, suitable for Father's Day, seasonal orders, and mid-year gifts. The assortment includes three flavors: matcha, genmaicha (brown rice tea), and roasted tea.
Matcha" is a dish using matcha for the mousse and sencha for the jellied tea. The tea leaves are specially blended to bring out the full flavor and richness of the tea leaves. The mousse is rich in the characteristic flavor and richness of matcha, while the Sencha julée is clean and well-balanced.
Genmaicha" is a mousse and jellied Genmaicha that brings out the best of both the sencha and brown rice parts of Genmaicha. The delicate aroma and flavor of sencha tea and the savory taste of brown rice are reproduced in the form of a mousse with a unique combination of the two, resulting in a well-balanced and rich flavor.
Roasted tea is used in both the mousse and the jellée. It is said that the extraction time of hojicha tea was adjusted and the balance with chocolate was created through trial and error. The roasted tea has no bitterness or astringency unique to hojicha, and its savory flavor is used to its fullest.
