The chef of "Western-style confectionery Gigan Sakai" in Hanamikoji, Gion, Kyoto, has evolved the tradition of the traditional sweets with the idea of creating a new souvenir unique to Kyoto. Aromatic caramel made from Hokkaido cream and sugar, cooked to the last possible consistency, is wrapped in a dough made from stone-pounded Koshihikari rice.
