The lemon tea jelly is topped with a rich baked cheesecake made with three kinds of cheese and a brightly colored pistachio macaroon, creating a pretty appearance that makes you want to take a picture. The rich cheesecake is said to be an "edible lemon tea" with a fresh lemon flavor, and is marketed as a dish that goes well with early summer.

The jelly is made with butterfly peas from a certified organic farm in Thailand, and the refreshing citrus flavor of the yuzu sorbet reminds one of the beginning of summer. Lemon juice is added just before the sorbet to create a bright blue gradation. It is said that the dish looks even more beautiful in natural light, so it can be enjoyed even if you take it home with you.
