The king of pufferfish, the tiger pufferfish, and the queen of pufferfish, the globefish, caught in the Sea of Japan, are used. The long-established fishery company that has been in Shimonoseki for more than 100 years supervises this dish, and offers three different flavors of fugu for you to compare. The "Marinated Pufferfish" marinated in a special sesame sauce has a rich flavor and the aroma of sesame stimulates the appetite. The "Fugu Jure Ponzu" is aged using a unique technique, which gives the dish a rich flavor that spreads with every bite. The "Gunkan with Puffer Fish" uses the skin of the puffer fish and mixes it with mekabu, so that you can enjoy the crispy texture of the puffer fish and the mekabu at the same time. Fukui Salmon, raised freely in the cold, clear waters of Wakasa, is characterized by its bright salmon pink flesh.
