The fifth installment was conceived by Grandmaison Ginza, the flagship store of KIRFEBBON. This gorgeous tart uses a generous amount of Niigata Prefecture's "Echigohime" strawberries, which are delicious this time of year. You can enjoy the combination of the fragrance, sweetness, and juice of the strawberries with the crispy tart and custard cream that is the pride of Quilfebont. The edges of the tart are decorated with gold leaf powder to evoke the glittering streets of Ginza and the snow falling in Niigata, where the inventor is from.

Echigohime

Echigohime" is an original variety of Niigata Prefecture, named after the "pretty and fresh princess of Niigata. It was developed as a variety that can be grown even in snowy regions with short daylight hours. Because spring comes late in Niigata, the shipping season is later than that of strawberries from Kyushu and the Kanto region.

It is characterized by low acidity, high sugar content, very juicy and strong aroma. The peel is glossy and bright red, and the flesh is soft and smooth.

Echigohime" is rarely seen outside of the prefecture due to the possibility of the pulp being crushed during transportation using ordinary packaging materials. With the cooperation of the growers, a special wrapping material that wraps each fruit individually was used to reduce the impact during transportation, making it possible to sell the product at all 10 Kirfevon stores from Sendai to Fukuoka.
