Hatsuatsu Tendon
A dish of tempura bonito tataki, which is landed at Kesennuma Port in Miyagi Prefecture and smoked with straw in Yaizu, Shizuoka Prefecture, and then chopped into a savory aroma. The combination of scallion and ginger, which is full of flavor, makes a perfect match with the "Kakiage (scallion and ginger) with mitsuba (mitsuba leaves). The tempura is accented with "Megochi," which goes well with tempura, "sprouted ginger" from Iwashita Shokuhin, a well-known "fresh ginger" brand, and "Kishu Nanko Ume," which adds a refreshing flavor and texture, creating a well-balanced tendon bowl.
