The potatoes are 100% grown in Hokkaido, and are cut whole with the skin on to preserve the flavor components. Hokkaido's climate, with its large temperature difference between day and night, nurtures delicious potatoes. After harvest, the potatoes are inspected for quality and stored under strict temperature control.

Currently, Hokkaido potatoes are small in size due to poor weather conditions. The small potatoes were also made into "jaga pokkuru" because the farmers wanted to use the potatoes they carefully grew.

Okhotsk salt from the brackish waters of Lake Saroma is used. The salt is made by boiling seawater slowly in a cauldron to produce a mild salt. Okhotsk salt accounts for 94% of the salt used.
