Mr. Yutaka Kobayashi of Kyoto Shotokuen, who holds the highest rank of 10-dan as a tea master for selecting and blending tea leaves, has blended Uji Matcha "First Bitter" exclusively for BAKE CHEESE TART. A total of 30 kinds of Uji green tea leaves are skillfully blended and adjusted to create a blend that gives the cheese tart a strong matcha flavor. The young tea leaves are picked early and have an elegant bitterness and aroma that harmonizes with the sweetness of the tart.

Matcha cheese mousse is a combination of first bitters, cream cheese, and mascarpone cheese. It is refreshing, mellow, and has the flavor of matcha.

The mousse is filled with red bean paste made from Hokkaido azuki beans and topped with Hokkaido dainagon azuki deer and kinako (soybean flour). The flavor of Uji green tea, the richness of the mascarpone cheese, the sweetness of the azuki beans, and the savory taste of the kinako will change your taste buds.
