Kinako no Baumkuchen

A baumkuchen with a fragrant and gentle flavor made with soybeans grown in Hokkaido. The baumkuchen dough is kneaded with kinako (soybean flour) and coated with a glaze (sugar) containing molasses. The size is about 14.5 cm in diameter and 4 cm in height.

During the development of the product, we began trial production of a baumkuchen using kinako, which has never been developed by Jiichiro before, with the theme of "a baumkuchen with a Japanese flavor that focuses on ingredients and aroma. If too much kinako is added to the dough, the moistness of the baumkuchen will be lost, and if too little, the flavor of the kinako will be lost, so the amount was adjusted many times. By adding soy milk cream to the dough, we were able to enhance the soybean flavor and arrive at the ideal texture and flavor.

For the glaze coating on the sides, we added molasses, which goes well with kinako, to add richness to the sweetness of the sugar. You can enjoy the fresh flavor of the ingredients by "drizzling" the optional kinako and molasses over the top.
