This consistency has the unique crunch, sweetness, and flavor of sea bream, and a refreshing citrus flavor with little fish odor. It is said to go well with sweet sushi vinegar.

The dish is positioned as the third installment of the "Giving Back to the Sea" initiative aimed at protecting fishery resources, and uses fully cultured sea bream from the Fisheries Laboratory of Kinki University. It takes only one and a half years for a sea bream to grow up to 1kg in weight, which is about half the time it takes for a natural sea bream fry.

Also known as Japanese group fruit, "Ainan Gold," a citrus fruit with a moderate sweetness and sourness, is used to make about five balls per sea bream. The fruits were grown by students of the agriculture department of Minamiuwa High School in Ehime. The product has obtained the GLOBALG.A.P. agricultural certification, which indicates that it is produced in a sustainable manner with consideration for food safety, labor environment, and environmental conservation.
