Ichiroku Tart Chestnut Zukuri

This is one of the "Ichiroku Tart" series, a well-known souvenir of Ehime Prefecture, and is made every year during this season. Chestnut bark powder and astringent chestnut sauce are added to the dough to resemble chestnut bark, while chestnut paste and chopped chestnuts are used for the red bean paste. Azuki red bean paste is mixed with white bean paste to enhance the flavor of chestnuts. The tart is described as a chestnut tart with chestnuts in both the dough and red bean paste.
