The "Nama-Nagoyan Matcha" is made with matcha-flavored sponge cake dough made with Japanese wheat flour, wrapped in a smooth cream with yellowish red bean paste mixed with Uji matcha and steamed. The bittersweet taste of the yellowish red bean paste cream with Uji matcha and its soft and moist texture can be enjoyed.

Soft Whipped Chiffon with Milk

A chiffon cake baked using the "separate baking method" and filled with whipped cream made from raw milk. Separate baking means separating the egg yolks and egg whites and whipping them separately before combining them. Chiffon dough, with its high water and oil content, tends to have air bubbles that easily collapse, so the separate whipping method allows the egg whites to hold the large, strong air bubbles, resulting in a fluffy texture. This is a dish where you can enjoy the rich yet refreshing whipped cream along with the fluffy dough.
