Chijimi is one of the popular Korean dishes. It is usually made by mixing vegetables such as chives with flour and baking, but this time we introduce a recipe for "enoki pancake style" using enoki mushrooms as the main ingredient. It is very easy to make.
Enoki Chijimi-style
Ingredients (for 1 person)
1 bag enoki mushrooms2 tablespoons potato starch
3 tablespoons water
about 5 cm green onion
1 tablespoon sesame oil
<Soy sauce
2 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon vinegar
1 cm garlic tube
A pinch of white sesame seeds
Directions
Mix all ingredients for sauce.Cut off the stones from the enoki mushrooms and cut into 2 to 3 cm pieces. Cut green onion into round slices.
In a bowl, mix the cut enoki mushrooms, green onions, potato starch and water. The dough does not need to be very cohesive as it will stick together when baked.
Spread sesame oil on a frying pan and bake the dough in a circular shape about 1 cm thick. Cover the pan and cook on medium heat for 3 minutes.
Turn the dough over and cook until browned. Cut into bite-size pieces with a knife.
