"MERCER bis" is a popular coffee stand where "raw caramel chiffon cake" is handmade by pastry chefs every day from the morning. It features a moist and light mouthfeel and a firm texture.

The most popular menu, "Raw Caramel Chiffon Cake," is now available at Blue Bottle Coffee. The chiffon cake, which is handmade from scratch by a pastry chef, has a light color that uses only egg whites, is moist and light like silk, and has a fluffy, chewy texture that retains moisture. In addition, for this collaboration, the menu "Chiffon Cake for COFFEE / ALL SPICE, ORANGE PEEL", which is the first arrangement of the chiffon cake dough of "MERCER bis", will be prepared. The chiffon cake, which is scented with instant coffee in a cocoa and blue bottle and baked with an accented orange peel in a dough that has been deepened with all spices, goes well with coffee. Whipped cream and caramel sauce are used as toppings, and the bitterness of caramel the moment you put it in your mouth, and the refreshing aroma and sweetness of all spices make it a taste that makes coffee unintentionally reachable.
