"Hot Souffle Chocolat" is a souffle that can be enjoyed not only in the cold but also in the warm, which is finished by layering a smooth chocolate paste on the soft and moist baked chocolate dough. Homemade pasteurized milk, flour, cocoa powder, etc. are mixed with the meringue that has been whipped with egg white, and the meringue is gently mixed so that the bubbles do not collapse, resulting in a soft and moist texture.

The paste is a blend of homemade raw chocolate with a rich cacao flavor and Belgian chocolate paste with a mellow taste, and by adding Western liquor, it is tailored to a rich yet refreshing aftertaste.
