Easy "fortune cookie" recipe with pancake mix!

Ingredients: Ingredients. This quantity will make 7-8 cookies.
50g (1.76oz) pancake mix
40g (1.41oz) granulated sugar
1 egg white
30g (1.06oz) butter
7-8 raffles (for preparing inside)
Prepare long thin raffles about 1 x 7cm. Write a message on each one and fold in half or roll into a roll.
PreparationBeat the egg whites in a bowl with a whisk until well beaten. Melt the butter in a microwave oven or over hot water.
Add the granulated sugar and melted butter and mix until combined.
Add pancake mix and mix well.
Place a tablespoon of the batter on each baking sheet and spread into a thin round about 10 cm in diameter.
Bake in a preheated oven at 180°C for 8 to 10 minutes. If the dough is still sticky, add more heat while keeping an eye on it.
When the dough is cooked to the point that it is no longer sticky, use a spatula to peel off the dough while it is still hot.
Turn the dough over and fold it in. Be careful not to burn yourself. When you are ready to shape it, let it cool and it is ready to serve!
