What is Echiré butter?

Fermented butter made from cow's milk grown in an environment blessed with soil and using a wooden churn (stirring machine) according to the traditional manufacturing method. Fermented butter is made by lactic acid fermentation of cream, so it has a sour taste like yogurt and is fragrant. The Echiré Dairy Cooperative began making butter in 1894, and while carefully using lactic acid bacteria that have been passed down from generation to generation, it continues to preserve the same taste with the old-fashioned manufacturing method.
