This amazake nouveau is made with Kuzumochi lactobacillus, a plant-based lactic acid bacteria that has been used since the Edo period, and new rice from 2020. Only new rice harvested in October is used to make this amazake. Because it is amazake made with rice malt, it is non-alcoholic.

One of the characteristics of this amazake is that the rice polishing ratio has been increased to 50% in order to remove miscellaneous tastes. No sugar or sweeteners are used in this additive-free product, and you can taste the deep, round, natural sweetness and rich thickening of the rice, which is simply the result of fermentation of rice with seed malt.
