Ingredients
2 eggplants1 clove garlic or 2 tsp tube
1.5 tbsp olive oil
1 tbsp soy sauce
1 tbsp mirin
Directions
Grate the garlic (if using a tube, leave as is) and mix with soy sauce and mirin to make sauce.Split eggplant in half lengthwise and make a slit on the split side. Be careful not to cut off the pieces, but make the slits deep.
Heat olive oil in a frying pan and cook the eggplant, starting from the cut side. Cover and cook over medium-low heat for 3 minutes.
Once browned, turn the eggplant over, cover again and cook for 2 minutes.
Remove the lid, turn off the heat and pour the sauce over the eggplant.
