Ingredients
3 eggplants1 onion
1 teaspoon garlic (tube is OK)
1 can cut tomatoes
2 teaspoons salt
A pinch of pepper
3 tablespoons olive oil
A pinch of chopped parsley
Method of preparation
1. peel the eggplant in stripes, leaving the hefty part, and cut a slit lengthwise (be careful not to go all the way through to the bottom). Coarsely chop the onion.Heat 1 tablespoon olive oil and garlic in a frying pan.
When onions are softened, add canned cut tomatoes, salt and pepper and cook for about 5 minutes.
Remove (3) from the pan and brown the eggplant in 2 tablespoons of olive oil in a frying pan.
5. put (3) in the eggplant slices, cover and cook over low heat for about 5 minutes.
Serve in bowls and sprinkle with parsley, if desired.
