This is the third restaurant specializing in farmed fish at Kindai University. Unlike the existing stores in Osaka and Ginza, Kindai raises fry, and then the farmed fish "Kindai-born fish" raised by local vendors are mainly handled.

"Takashima Honmaguro" by Sojitz Tuna Farm Takashima, a manufacturer specializing in tuna farming in Nagasaki Prefecture, "Fukaura Red Sea Bream" by Ataka Fisheries in Ehime Prefecture, etc. Under the international standard fishery ecolabel certification system "SCSA certification", fish that have been certified as sustainable and environmentally friendly farmed fish will be actively adopted.

It is operated for the purpose of returning research results to society, and is also used as a place to practice "practical education," which is the founding spirit of Kindai University. At the 3rd store as well, efforts will be made to incorporate student books into the interior of the store, provide menus for students involved in development, and disseminate student achievements.

The menu features a menu that can be quickly served, such as sushi made in a tub that looks like a Japanese tub, as well as a breakfast menu that is not available at the first and second stores. "Gold Award Healthy Rice" supervised by the Faculty of Agriculture of Kindai is used for rice, and red vinegar, which is a tradition of Edomae sushi, is used for sushi vinegar. In addition, "freeze-dried miso soup" containing an extract extracted from the middle bones of near-sized tuna has been newly developed.

"Kindai Red and White Handtub Sushi" is 2,200 yen (tax included, same below). "Kindai-born tuna" is used for crimson color, and "Kindai-born red sea bream" and "Kindai-born striped jack" are used for white, and congratulations on red and white are produced.
