Put rice, bacon, onion, half of the avocado, water and consommé in rice cooker, mix briefly and cook on fast cook mode.
When cooked, add milk and remaining avocado, close lid and let sit in keep warm mode for 10 minutes.
Season with salt and pepper to taste and give it a quick stir.
Plate and sprinkle with parmesan cheese and black pepper to taste!
How does it taste?
The contrast between the al dente rice, which is cooked quickly, and the avocado's melt-in-your-mouth texture is brilliant! The flavor is fresh, yet rich and full-bodied.The sweetness of the onions and milk adds depth. The umami and aroma of the bacon accentuates the flavor, and the tangy black pepper tightens the whole dish. The combination and balance of the two is at a level that could be served in a restaurant.
Because avocado is the main ingredient, the risotto is lighter than risottos with cheese or cream as the main ingredient. It does not leave a bad taste in the mouth and does not upset the stomach after eating.
The green color of the avocado and the pink color of the bacon give this avocado risotto a spring-like appearance. If you like avocados, this is a recipe that lets you enjoy them to the fullest! It is also recommended for entertaining!
