The challenge this time was "milk hot pot". I referred to the recipe of delicious milk in the Meiji era.

◆ How to make1. Pass the salmon cut into 3 equal parts in boiling water and rinse gently with cold water.
2. Cut other ingredients to a suitable size.
3. Put kelp soup stock and milk in a pan and melt the white miso.
4. Put the ingredients in a pan and simmer.
5. Complete when the ingredients are cooked.
I imagined a Western-style finish like milk soup, but it has a Japanese taste with the umami of dashi stock. The mellow white miso and the richness of the milk match. It contains salmon, potatoes, corn, etc. and is delicious for both adults and children. If you want an accent, sprinkle with shichimi pepper and the spicy spiciness will tighten the taste.
For the hot pot, we recommend adding rice to the Japanese-style risotto. The rice absorbs the taste of the soup and you can enjoy it until the last bite. From now on, it will become one of the standard hot pots.
