Tofu Mochi" with the mild sweetness of tofu and chewy texture is introduced here. The recipe is very easy! Just mix two ingredients and microwave. Try it for a warm winter snack.

150g (5.29oz) silken tofu50g (1.76oz) katakuriko (potato starch)
Sugar to taste
Soybean flour to taste
Directions
Place silken tofu and potato starch in a heatproof bowl and mix with a wooden spoon or fork.When smooth, cover with plastic wrap and microwave for 1.5 to 2 minutes. Remove and knead again. If the mixture becomes sticky, wrap again and place in the microwave. Heat again for 1.5 to 2 minutes.
Remove from microwave and knead again. When the dough becomes sticky and smooth, wet your hands with water and form the dough.
Mix in the soybean flour and sugar, sprinkle on the finishing touches, and voila!
How does it taste?
Pulled and chewy! The texture is more like warabimochi than mochi, sticky yet crispy. As you chew, the soft flavor of the tofu gradually spreads.Because the chewing time is so long, the taste gradually becomes bland if you eat a lot of it, so it is recommended to form it into smaller pieces. I think it would be absolutely delicious served not only with soybean flour, but also with molasses or with azuki beans! You can also roll it in seaweed and dip it in soy sauce to make it look like Isobe Mochi.
