This is the second holiday dessert by Mr. Ichie Takuma, the chef of Shirokane Takanawa's patisserie & French restaurant "Libre". The sweet and sour flamboise and the smooth and rich mascarpone are combined with the sweet strawberry. Mainly mousse, two-color meringue and bright red jelly are designed to make the holiday look more exciting.
A dessert with a discovery that is fun enough to eat, both in flavor and texture. Strawberry mousse contains strawberry dice cut and mascarpone and is wrapped with sponge dough. The surface of the sponge dough is topped with Franboise jelly, which goes well with strawberries, and meringue in two colors, white and red. The contrast between the heavy texture of mousse and sponge and the light texture of meringue creates a pleasant harmony when placed in the mouth.
