Easy recipe for "Pumpkin Cake" made in a rice cooker.

water (esp. cool, fresh water, e.g. drinking water) | 50cc |
Powdered sugar (to taste) | proper quantity |
Speaking of autumn, pumpkin is in season! All you have to do is mix the ingredients and cook it in a rice cooker.

What to prepare. I used a recipe from Yamazawa as a reference.Pumpkin 300g (10.58oz)
150g (5.29oz) pancake mix
3 tablespoons sugar
1 egg
100cc milk
20g (0.71oz) butter
1 tablespoon salad oil
1/4 teaspoon salt
50cc water
Powdered sugar (optional) to taste
Directions
Cut pumpkin into bite-sized pieces and place on a pan. Add 50cc of water and 1/4 teaspoon of salt, cover with a lid and steam over low heat.If you don't have a frying pan, you can steam in a microwave oven using a silicon steamer.
Remove the softened pumpkin from the heat, mash it coarsely and set aside to cool.
In a bowl, mix sugar, eggs, milk, butter (melted) and pancake mix.
Add more mashed pumpkin and mix.
Spread salad oil evenly on the inside of the rice cooker and pour in the batter. Start cooking rice in normal mode.
When cooked, turn the rice over and remove to a plate, sprinkle with powdered sugar if desired, and voila! If the rice is still raw, cook it again.
How does it taste?
Mmm~! Moist, rich, and delicious! The moist texture and sweetness is like pumpkin pudding. The pumpkin is mixed in with the skin, so the savory bitterness is a perfect accent.When mashing the pumpkin, you can enjoy the crunchy texture more if you leave a little coarseness and a bit of a rough texture. On the other hand, if you want a smoother texture, mash it firmly. You can enjoy the freshly baked dumplings either warm or cooled in the refrigerator. The cooler the cake is, the stickier it becomes.
It can be served with whipped cream or vanilla ice cream for an even richer dish. It is also recommended as a dessert for a Halloween party!
