cotton tofu 1/2 a dozen
miso 1 cup
sake 2 to 3 tablespoons

Ingredients

I use Kirin's recipe as a reference.

1/2 tofu
1 cup miso
2-3 tablespoons sake

Directions

Wrap the cotton (momen) tofu in kitchen paper and place on a bat or similar surface, weigh it down (a plate is OK) and let it drain thoroughly for at least 30-40 minutes. If possible, change the paper 2-3 times during the process.

Mix miso and sake.

Wrap the drained tofu in fresh kitchen paper and smear miso all over. Keep this in the refrigerator at least overnight.
