For all of you who are always on the lookout for new snacks to go with your beer! I recommend "Tofu marinated in Miso", which is made by marinating cotton (momen) tofu in soybean paste.
Tofu marinated in miso
IngredientsI use Kirin's recipe as a reference.
1 cup miso
2-3 tablespoons sake
DirectionsWrap the cotton (momen) tofu in kitchen paper and place on a bat or similar surface, weigh it down (a plate is OK) and let it drain thoroughly for at least 30-40 minutes. If possible, change the paper 2-3 times during the process.
Mix miso and sake.
Wrap the drained tofu in fresh kitchen paper and smear miso all over. Keep this in the refrigerator at least overnight.
Remove the paper, cut, place in a bowl, and voila!
How does it taste? It tastes sticky and filling to the palate. The aroma and salty taste of the soy sauce enhances the mild umami of the tofu and spreads on the tongue. Ohhhh, I want a beer!
The key is to drain the tofu thoroughly before dipping it in miso. The longer you marinate it, the thicker and stickier it becomes. If you marinate it too long, it may become too salty, so adjust the marinating time to your liking!
