"Four Shop Hanoi Hoi-san" is about a 3-minute walk from the west exit of the south ticket gate of JR Shibuya Station. It is a restaurant that serves pho at lunch time and pho as well as food and sake from all over Vietnam at dinner time.
The name of the restaurant was taken from Mr. Hui, who lives in Hanoi and ate more than 500 phos in Vietnam when opening the restaurant. The Meguro store also opened in 2015.

There is a wide variety of phos, including a gar soup made with chicken and a bo soup made with beef, and a lineup of seasonal limited menus. The author chose "Shrimp raw spring rolls" for "Seafood pho" of gar soup (900 yen including tax). When ordering, the clerk will ask you if you have coriander, so if you are not good at it, please decline it here.
Pho topped with squid, scallops, shrimp, pana shellfish, bean sprouts, green onions, coriander, and onions. An appetizing scent rises.
The highly transparent soup, which is made by carefully removing the soup stock from chicken broth over 12 hours, has a light finish overall. When swallowed, the soft richness and umami spread slowly. With an exquisite taste that you won't get tired of, you can continue to drink forever.
Not to mention the deliciousness of the soup, what you should pay attention to is the Vietnamese dried noodles with tapioca! Mochimochi, Purupuru, Turunturun . Unique texture and elasticity that you feel every time you chew. Pho noodles had a thinner and smoother image, but I was a little surprised at the chewy texture that exceeded expectations.

The spring rolls on the side dish are a little big, but be sure to take a bite. You can enjoy the sweetness of crispy vegetables, the flavor of shrimp, the taste of meat, and various deliciousness in gradation. This spring roll alone seems to be enough for 5 or 6 rolls.
The dessert is lotus tea and ginger jelly. The slightly fragrant ginger refreshes the mouth. I think 900 yen is a great deal with this.
